If you like something bright and fruity, start with Gin & Jam, blending Tarquin’s gin with lemon, raspberry and jam for a sweet-sharp serve with Cornish character, while Oh My Mango! brings together Connie Glaze lemon sherbet vodka, mango and apricot for a glass that tastes like sunshine. Looking for something a little more tropical? Cuban Cobbler layers banana rum, peach, orgeat, lime and basil, while Tiki Guru leans into pineapple, rum and lime, and Coconut Punch brings the tequila, raspberry and coconut for that laid-back holiday feeling.

For those drawn to something a little more distinctive, there is plenty to explore. T O’Clock mixes Hendrick’s gin with strawberry, cucumber and orgeat for a soft, refreshing finish. Toki No Kaori layers Suntory Toki whiskey, apricot, elderflower and plum for something elegant and floral. Velvet Orchard brings Connie Glaze toffee vodka, apple, salt and chocolate into after-dinner territory, while White Bay, with Baileys, vanilla, hazelnut, coffee and cinnamon, is made for lingering just a little longer.

Each month also brings something new to the bar. This August, the Cocktail of the Month is Strawberries & Cream: Puerto De Indias Strawberry Gin, Knightor Dry Vermouth, strawberries and cream blended into a smooth, sweet and refreshing serve inspired by the flavours of summer.
